So,
what do you eat for breakfast when you can't eat eggs, dairy, or wheat?
Oatmeal! This has been my salvation these past three weeks and I've
discovered that I love it!
I
started with straight up steel cut oats; pretty yummy but couldn't
quite pull me through my morning. So, I came up with Quinoa Cut Oats and
have become an innovator in the kitchen! The best part is that it keeps
really well and is super easy to reheat so I only have to make it once a
week and I have a nutritious breakfast everyday; my naturopath is so
proud!
1/2 cup Steel Cut Oats
1/2 cup Quinoa
4 cups Water
To Cook:
Over
high heat bring the water to a boil, add the oats & quinoa. Turn
the heat down to medium and give it a good stir. It will take about 25
minutes to cook, depending on how dry you want it. Stir it every once in
a while when you think about it. You'll know it's done when it forms a
skin on top, stir this skin back into the oatmeal, it holds all sorts of
fantastic healthy goodness. Top with whatever you like, fruit, nuts,
berries, etc. Enjoy! (Makes 4 - 5 servings)
Ideas:
I
like to add some cinnamon and honey while it's cooking, it's delicious
and makes my apartment smell great. I usually add some almond milk to
it; you could probably substitute some of the water for almond milk
while cooking just be careful to stir it more often at the end so it
doesn't burn. The options for toppings are endless, strawberries or peaches are my faves, but I'd love to hear how you like it!
